This easy way to make sugared candied cranberries will give you pretty cranberries that are perfect for garnishing holiday desserts or enjoying as a tart treat.
1cupfresh cranberriesdo not use frozen cranberries
¾cupwater
1cupgranulated sugardivided
Optional: orange zestsparkling sugar, sprigs of rosemary
Instructions
Place the raw cranberries in a large mixing bowl. Set aside.
In a medium saucepan over medium-high heat, bring the water and 3/4 cup of sugar to a simmer, stirring until the sugar dissolves. Remove from heat and let it cool for 5 minutes.
Pour the hot syrup over the cranberries and stir gently to coat them. Cover the bowl and let it sit for 15 minutes.
Line a sheet pan with parchment paper. Using a slotted spoon, transfer the cranberries from the syrup to the prepared pan. Let them dry uncovered for 1 hour. They will be quite sticky at this point.
Place the remaining 1/4 cup of sugar in a large bowl (you can also use powdered sugar, vanilla sugar, or sparkling sugar for an extra festive touch). Toss the cranberries in the sugar until fully coated. Spread them out in a single layer on a wire rack or cooling rack and let them dry uncovered for at least another hour at room temperature.
Notes
Store the sugared cranberries in a closed container at room temperature or in the refrigerator for a few days. If they become too sticky, simply coat them in more sugar before storing.
