¾ cup unsalted butter room temperature 1 cup granulated white sugar 1 large egg 1 tsp pure vanilla extract 1 ⅔ cup all-purpose flour 1 small 3.4 oz box vanilla instant pudding mix 1 tsp baking soda ½ tsp salt 1 cup white chocolate chips 2 Tbsp rainbow sprinkles

Preheat the oven to 350 and line cookie sheets with parchment paper.
In a large bowl cream butter and sugar together.
Add vanilla and egg.
Mix until well combined.
Add the vanilla pudding mix to the wet ingredients and mix well.
Add remaining dry ingredients and mix again.
Mix in white chocolate chips and 1 Tbsp of the sprinkles to form a cookie dough.
Use a cookie scoop to drop dough balls onto the prepared baking sheet.
Pour the remaining sprinkles into a small dish and roll the cookie dough ball into the sprinkles
Bake for 8-10 minutes until the edges just start to turn golden brown.
Move to a wire rack to cool and store in an airtight container.
