Prepare a large baking sheet by lining it with parchment paper. Preheat the oven to 350 degrees F.
Prepare the salmon by removing pin bones with tweezers or pliers if needed.
Place the fillet on the prepared sheet pan, skin side down.
Coat with 2 Tbsp melted butter, lemon juice and salt & pepper.
In a medium bowl combine panko, garlic, parmesan, 1/4 cup melted butter, lemon zest and seasonings. Mix well.
Cover the top of the salmon fillet with the breadcrumb mixture.
Bake in the oven for 20 mins.
Cut the salmon into 2" pieces, leaving the salmon skin on the piece of parchment paper.
Serve with a squeeze of fresh lemon juice.
