Herb Crusted Salmon Recipe (Baked in 20 Minutes!)

Ingredients

  • 2 pound koho salmon fillet skin on
  • 2 Tbsp unsalted butter melted
  • 1 tsp lemon juice
  • ¼ tsp each salt & pepper
  • 1 cup Panko breadcrumbs
  • 2 cloves garlic minced
  • 1 Tbsp Italian seasoning
  • 1 Tbsp fresh dill chopped
  • 3 Tbsp parmesan cheese grated
  • ¼ cup unsalted butter melted
  • ½ lemon zested

Instructions

  • Prepare a large baking sheet by lining it with parchment paper. Preheat the oven to 350 degrees F.
  • Prepare the salmon by removing pin bones with tweezers or pliers if needed.
  • Place the fillet on the prepared sheet pan, skin side down.
  • Coat with 2 Tbsp melted butter, lemon juice and salt & pepper.
  • In a medium bowl combine panko, garlic, parmesan, 1/4 cup melted butter, lemon zest and seasonings. Mix well.
  • Cover the top of the salmon fillet with the breadcrumb mixture.
  • Bake in the oven for 20 mins.
  • Cut the salmon into 2" pieces, leaving the salmon skin on the piece of parchment paper.
  • Serve with a squeeze of fresh lemon juice.
