Keto Cranberry Bliss Bars

Ingredients

Dough

  • ½ cup butter softened
  • cup Swerve brown sugar sweetener
  • 1 egg
  • 1 tsp fresh ginger minced
  • 1 tsp vanilla extract
  • 1 tsp fresh orange zest
  • 2 cups almond flour
  • 1 tbsp gelatin 1 packet
  • ½ tsp baking soda
  • ¼ tsp salt
  • cup Lily's sugar-free white chocolate chips
  • ¼ cup sugar-free dried cranberries chopped

Frosting

  • 8 oz cream cheese softened
  • ½ cup Swerve powdered sweetener
  • ½ tsp vanilla extract
  • ½ tsp orange extract
  • 1 Tbsp heavy cream

Garnish

  • ¼ cup sugar-free dried cranberries chopped
  • ½ cup Lily's sugar-free white chocolate chips
  • ½ Tbsp coconut oil

Instructions

  • Combine butter, sugar, extract, ginger, orange zest and egg in a medium mixing bowl.
  • Mix in flour, baking soda, gelatin and salt until a soft dough forms. 
  • Finally, fold in Lily's white baking chips and dried cranberries. 
  • Spread the dough into a greased 7"x11" or 9"x9" pan. 
  • Place it into the oven at 350 degrees for 15-20 mins.  The edges with brown and the center should be firm.
  • Bring the bars out of the oven and allow them to cool completely.
  • Using an electric mixer, beat the frosting ingredients until well combined.
  • Spread frosting all over the bars.
  • Melt the Lily's white chocolate and coconut oil in a microwave safe bowl.  A double boiler works best otherwise the white chocolate can clump very easily. 
  • Sprinkle the chopped cranberries over the bars and drizzle the Lily's white chocolate overtop.
  • Finally, cut the bars into triangles.
