Peanut Butter Yogurt Bites

Ingredients

  • 1 cup plain Greek yogurt
  • cup natural peanut butter
  • 6 oz dark chocolate chips
  • ¼ cup salted peanuts chopped

Instructions

  • In a large bowl, mix together the Greek yogurt and peanut butter until smooth. If you like it sweeter, add a drizzle of maple syrup.
  • Use a cookie scoop or a pastry bag to portion out small circles of the yogurt mixture onto a parchment paper-lined baking sheet. Smooth each one with the back of a spoon into thin circle shapes.
  • Freeze for about 30 minutes. This helps the clusters firm up before dipping in chocolate.
  • Melt the chocolate in a microwave-safe bowl in 15 to 30-second intervals, stirring each time to prevent it from seizing. If needed, stir in a teaspoon of coconut oil for a silky texture.
  • Dip each frozen yogurt cluster into the melted chocolate. Use a fork to let excess chocolate drip off before placing it back on the baking sheet.
  • Top with a sprinkle of chopped peanuts or even flakey sea salt for extra flavor.
  • Place clusters back in the freezer for at least 1-2 hours until the chocolate shells are set.
  • Store in an airtight container or freezer bag and enjoy any time of day!

Notes

  • Dairy-Free Option – Swap out the Greek yogurt for unsweetened coconut milk yogurt for a delicious dairy-free alternative.
  • Make It Sweeter – If you like things on the sweeter side, mix in a tbs of the mixture with a liquid sweetener like maple syrup or honey.
  • Change Up the Nut Butter – Almond butter, cashew butter, or sunflower butter all make great swaps for peanut butter.
  • Try White Chocolate – If you prefer a milder chocolate flavor, use white chocolate for a fun twist on the classic peanut butter cup taste.
