smoke spice blend

peach jam

Instructions
Season the cast iron skillet with olive oil.
Place the block of cheese in the center of the skillet.
Score with a knife in a cross hatch pattern.
Sprinkle the surface of the cheese with seasoning.
Place in the smoker at 165 F.
Let the cheese smoke for 1 hour.
Remove from the smoker, top with jam, and serve with crackers for dipping.
