Ingredients

  • 30 dates fresh & pitted
  • ¾ cup creamy peanut butter
  • 3 oz dark chocolate
  • ½ cup salted peanuts

Instructions

  • Line a baking tray with parchment paper.
  • Arrange the dates into a square on the parchment-lined tray. Cover them with another sheet of parchment and use the bottom of a cup or rolling pin to smash them into an even layer.
  • Spread an even layer of peanut butter over the dates. Use the back of a spoon to smooth it out.
  • In a microwave-safe bowl, melt the chocolate in 30-second intervals, stirring in between to prevent burning. Add teaspoon of coconut oil if needed.
  • Pour the melted chocolate over the peanut butter layer, spreading it evenly. Sprinkle salted peanuts on top.
  • Place the tray in the fridge or freezer for 30 minutes to an hour until the chocolate sets.
  • Use a sharp knife to slice the bark into bite-sized pieces. Enjoy immediately or store in an airtight container at room temperature.

Notes

  • Fresh, plump Medjool dates with their caramel-like taste are the best choice. If your dates are too dry, soak them in hot water for a few minutes to rehydrate.
  • While peanut butter is a classic choice, almond butter or cashew butter can add a unique twist to this easy recipe.
  • If you’re using milk chocolate or regular peanut butter, you might want to sprinkle a touch of sea salt to balance the sweetness.
  • Crushed sunflower seeds, coarse sea salt, or even a drizzle of melted vegan chocolate can elevate the bark’s flavors.
  • For neat, smaller pieces, dip your knife in hot water before slicing through the hardened layers.
  • Keep your bark in a single layer in an airtight container to maintain its chewy texture and delightful crunch.
