Sweet Potato Big Mac Bowls

These sweet potato Big Mac bowls are loaded with seasoned beef, fresh toppings and that signature Big Mac sauce. This is a fun, easy dinner packed with bold burger flavor.

Ingredients

  • 4 medium sweet potatoes
  • 1 lb lean ground beef
  • 1 tbsp taco seasoning
  • 2 cups lettuce shredded
  • ½ cup cheddar cheese shredded
  • ½ white onion diced
  • ½ cup Big Mac sauce
  • ¼ cup pickles sliced
  • 1 tsp sesame seeds

Instructions

  • Pierce the sweet potatoes with a fork and place them in the basket of an air fryer.
  • Cook for 20 minutes, or roast them in the oven at 350°F for 40 minutes until tender.
  • While the potatoes cook, brown the ground beef in a skillet, breaking it apart as it cooks.
  • Drain any excess oil and stir in the taco seasoning until well combined.
  • To build the bowls, cut the sweet potatoes in half and lightly mash the insides with a fork.
  • Top with shredded lettuce, seasoned beef, diced onion, pickles, Big Mac sauce, and a sprinkle of sesame seeds.
