Sweet Potato & Granny Smith Apple (Sheet Pan Recipe)

Ingredients

  • 2 medium sweet potatoes 2 lbs. or about 4 cups, peeled and cut into 1” cubes
  • 2 granny smith apples peeled and cut into 1” cubes
  • 2 Tbsp olive oil
  • 1 tsp Himalayan salt
  • 2 Tbsp pure maple syrup
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp nutmeg

Instructions

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • Use a vegetable peeler to peel the sweet potatoes and apples, then cut everything into cubes.
  • In a large bowl, toss sweet potatoes in olive oil and salt. Spread them out in a single layer on the baking pan.
  • Bake for 20 minutes or until they just start to brown.
  • Meanwhile, place the apples in a small bowl and coat with the remaining ingredients.
  • At the 20 minute mark, add the apple mixture to the sheet pan.
  • Bake for an additional 20 minutes.
  • Serve with your favorite holiday dishes!
