The Best Banana Pancake Recipe

This is seriously the best banana pancake recipe - absolutely delicious and easy to make! These pancakes are even better than traditional flapjacks!

Ingredients

  • 1 cup all purpose flour
  • 1 Tbsp white sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 cup milk
  • 2 Tbsp butter melted
  • 2 ripe bananas mashed
  • 1/2 tsp vanilla extract
  • 1/4 cup semi sweet chocolate chips optional
  • 1/4 cup walnuts chopped (optional)
  • Butter
  • Maple syrup

Instructions

  • 1. Sift together dry ingredients; flour, sugar, baking powder and salt in a medium bowl.
  • 2. In a separate bowl with a whisk or hand mixer, mix together egg, milk, melted butter, vanilla and mashed banana.
  • 3. Add the wet ingredients to the flour mixture and combine until a lumpy batter is formed.
  • Note: at this point you can fold in the chocolate chips if you desire.
  • 4. Preheat a large skillet, frying pan or griddle over medium heat.
  • 5. Using a measuring cup or scoop pour about 1/4 cup of the pancake batter for each pancake onto the hot skillet.
  • 6. Cook until the pancake is golden brown on each side, approximately 3 minutes.
  • 7. Serve warm with butter, syrup and walnut pieces.

Notes

Tip: look for the creation of bubbles around the edges of the pancake to know that the first side is done and then flip pancakes to cook the second side.
Note: place cooked pancakes on an oven safe plate or baking sheet in the oven on the lowest setting to stay warm while cooking the rest of the homemade pancakes. I like to cover the fluffy pancakes with paper towel between batches, this is a great way to keep them from becoming too moist.
