Ingredients

  • 1 cup mayonnaise
  • ½ cup parmesan cheese shredded
  • Juice from half a lemon about 2 Tbsp
  • 6 garlic cloves
  • 1 tsp brown mustard
  • 1 tsp anchovy paste
  • 1 tsp worcestershire sauce
  • Salt & pepper to taste

Instructions

  • Juice half a lemon.
  • Combine ingredients into a medium bowl.
  • Use a hand blender to mix into a smooth consistency.
  • Add salt & pepper to taste.

Notes

  • Whip up a batch and store it in a mason jar in the fridge. That way, it’s ready to go for your next salad or grilled dish. It stays good for a couple of weeks, and trust me, it only gets better as the flavors blend.
  • If your dressing turns out a little too thick, don’t worry! Just add a splash of lemon juice or even a bit of water to thin it out to your liking. A good Caesar dressing should be creamy but still pourable.
  • Want to switch things up? Try tossing in some lemon zest for extra brightness or a bit more garlic if you're a garlic lover. You can also sub Greek yogurt for mayo if you want a lighter, tangy twist.
  • If you're not a fan of anchovy paste or don't have it on hand, you can easily swap it with fish sauce or finely chopped anchovy fillets. Both will give you that savory umami flavor without overwhelming the dressing!
