The Best Crockpot Lasagna Soup Recipe

Ingredients
- 1 pound ground beef
- Medium onion chopped
- 1 bell pepper diced
- 2 cloves garlic minced
- 2 cups mini lasagna noodles or 8 broken lasagna noodles
- 250 g jar of marinara pasta sauce
- 1 Tbsp Italian seasoning
- 14 oz can diced tomatoes
- 6 cups beef broth
- 1 cup shredded mozzarella cheese
- 1 cup chopped fresh spinach
- ¼ cup grated parmesan cheese for serving

Instructions
- 1. Cook ground beef and drain.
2. Add beef and remaining ingredients except for the cheese and spinach to a crockpot.
3. Cook in the crockpot on low for 4 to 6 hours. Ten minutes before serving add spinach and cheese.
4. Top with fresh parmesan cheese if desired. Serve with focaccia mug bread.
