Line the bottom of a square 8 inch x 8 inch non stick baking pan with parchment paper.
In a large bowl or stand mixer, combine dry ingredients. Add butter, eggs and vanilla and mix until a soft dough forms. Add Valentines sprinkles.
Spread the dough evenly into the baking pan.
Bake for 15-20 minutes or until a toothpick inserted comes out clean. Allow to completely cool.
Prepare the frosting and decorating ingredients.
Use the back of a spoon or butter knife to spread frosting over the top of the cookie.
Top with Valentine sprinkles and candy hearts.
Cut into 2 inch bars for serving.
Notes
After mixing the dough, let it chill in the refrigerator for 10-15 minutes. This helps the dough firm up, the bars bake more evenly and hold their shape better.
While Valentine sprinkles are a fun way to decorate, feel free to get creative with your toppings! You can mix in mini chocolate chips, red and pink candy-coated chocolates or even heart-shaped candies for a personalized touch.
A square 8x8-inch pan works perfectly for these cookie bars, yielding 16 nicely-sized portions. If you prefer thinner bars, you can use a larger pan (like a 9x12 inch) but be sure to adjust the baking time accordingly. Check with a toothpick for doneness.
After baking, let your Valentine cookie bars cool completely on a wire rack before spreading frosting. This prevents the frosting from melting into the warm bars and ensures a thick, even layer of frosting that sticks well to the surface.
