Viral 2-Ingredient Japanese Cheesecake (Tiktok Recipe)

This creamy, no-bake 2-Ingredient Japanese cheesecake is made with just yogurt and Biscoff cookies! This viral TikTok dessert is easy, lightly sweet, and totally irresistible.

Ingredients

  • 2.5 cups Oikos Greek Yogurt 650g Vanilla or Plain
  • 250 g package Biscoff Biscuit Cookies I used about 2/3 of the package
  • ½ cup Espresso coffee optional
  • 1 Tbsp Unsweetened cocoa powder optional

Instructions

  • Open the container of yogurt, transfer it into a small baking dish (approximately 4x6”), and spread it out evenly.
  • Optionally: dip cookies in espresso.
  • Press the Biscoff cookies vertically into the yogurt, side by side, filling the entire dish. Break cookies in half if needed to fill gaps.
  • Refrigerate for at least 6 hours to allow the cookies to soften and the flavors to meld together. Only 2 hours is needed if cookies are dipped in coffee.
  • Remove from the fridge, sprinkle with cocoa if desired and serve.

Notes

  • Use thick Greek yogurt for best results; thinner yogurt won’t hold the cookies as well. Skyr and Siggi's are popular brands that would work well! You could try different yogurt flavors too!
  • In a hurry? Dip the cookies in a liquid, like espresso, before placing in the yogurt to speed up the chilling time.
  • Let it chill longer if you want a softer, cake-like texture throughout.
  • If you prefer sweeter desserts, drizzle honey or maple syrup over the top before serving. Or try adding a teaspoon of vanilla to the yogurt.
  • Break cookies strategically to ensure every bite has yogurt and cookie together.
  • For the best texture, served fully chilled.
