How to store this salad:
Transfer any leftovers into an airtight container, and return to the fridge when you’re finished eating. To maintain food safety, this isn’t a dish that should be left out at room temperature for too long.
You can also place your serving dish over a large mixing bowl filled with ice if you aren’t going to be able to refrigerate leftovers right away.
Optional ingredients:
- Substitute light mayo, Miracle Whip, Greek yogurt, or sour cream for full-fat mayonnaise.
- Green grapes can easily be swapped out for the red seedless grapes.
- Try sweet onion in place of, or combined with, red onion.
- Add chopped fresh herbs like dill for extra flavour.
- A little bit of lemon juice balances the sweet flavours with a little tang.
- Serve this delicious chicken salad in lettuce wraps or as more traditional chicken salad sandwiches.
Quick tips:
- Pick up a rotisserie chicken and throw it in a stand mixer to break it up quickly.
- Add cooked chicken to your food processor and pulse until your meat is broken into small pieces.
- Use leftover chicken from the night before to whip up the perfect lunch.
- For extra tender chicken, cook the chicken breast in a slow cooker with some chicken broth.
This simple chicken salad recipe can easily be doubled or tripled for a crowd. Serve it in small lettuce cups or crunchy celery boats at a bridal or baby shower.
A large bowl of chicken salad would also be a great addition to your next Canada Day or Fourth of July potluck. Enjoy!
