The combination of fresh salad ingredients and creamy dressing creates amazing flavour with just the right textures. The best part of this tasty chicken salad is that it is also a great low carb option.

Chicken Salad With Grapes Ingredients

Ingredients:

  • 1/2 cup mayonnaise
  • 1 1/2 tsp dijon mustard
  • Salt and pepper, to taste
  • 2 cups cooked chicken breasts
  • 2 stalks celery, diced
  • 1/4 cup diced red onion (can use green onions)
  • 1 cup sliced red grapes, or less to taste

Directions:

1. In a large bowl, stir together the mayonnaise, dijon mustard, salt and pepper.

2. Toss the chicken in the dressing until well-coated.

3. Stir in the diced stalks of celery, onion and grapes until well-distributed.

4. Refrigerate until ready to serve.

Makes 4 servings. This salad may be served on its own as a side dish for smoked burgers, barbecue ribs or smoked brisket. It can also be served as a stand alone dish on a bed of lettuce or in a fresh white roll as a chicken salad sandwich.

How to store this salad:

Transfer any leftovers into an airtight container, and return to the fridge when you’re finished eating. To maintain food safety, this isn’t a dish that should be left out at room temperature for too long.

You can also place your serving dish over a large mixing bowl filled with ice if you aren’t going to be able to refrigerate leftovers right away.

Optional ingredients:

  • Substitute light mayo, Miracle Whip, Greek yogurt, or sour cream for full-fat mayonnaise.
  • Green grapes can easily be swapped out for the red seedless grapes.

  • Add chopped fresh herbs like dill for extra flavour.
  • A little bit of lemon juice balances the sweet flavours with a little tang.
