Cottage Cheese Chocolate Chip Cookies

Today I want to offer you a healthier alternative to traditional chocolate chip cookies. The recipe I am sharing includes cottage cheese for a major protein boost.

Blending the cottage cheese gives it a perfectly smooth texture, so you won’t even notice that it is there. You are going to love these delicious protein packed cookies!

Ingredients

  • Unsalted butter, softened
  • Brown sugar
  • Large egg
  • Cottage cheese – I use 2%
  • Pure vanilla extract
  • Almond flour
  • Baking powder
  • Chocolate chips – I personally like to use dark chocolate chips.

Instructions

1. Line a baking sheet with parchment paper.

2. In a medium mixing bowl, cream together butter and sugar.

3. Add egg and vanilla extract to the mixture.

4. Use a hand blender or food processor to blend the cottage cheese until it is smooth.

5. Add cottage cheese to the rest of the wet ingredients.

6. Add remaining dry ingredients and mix until a soft dough forms.

7. Fold in chocolate chips.

8. Preheat the oven to 350 degrees F.

9. Use a cookie scoop to drop balls of dough onto your prepared baking sheet.

10. Bake for 10-12 minutes or until the edges of the cookies start to brown.

11. Place on a wire rack to cool.

Recipe Notes

  • For an extra boost of protein, add vanilla protein powder to your cookies.
  • This recipe contains no added salt because cottage cheese often contains enough sodium. You can add some in, according to taste, if you prefer.
  • Add any of your favorite cookie dough mix-ins. Try milk or white chocolate chips, caramel bits, chopped up candy bars, nuts, sprinkles, or mini M&Ms.
  • Store cookies in an airtight container for up to 3 days at room temperature or longer in the refrigerator or freezer.
