These sweet potato bowls have taken over taco night! When I first saw this sweet potato beef bowl all over social media, it reminded me of our copycat Chipotle beef burrito bowls but with a hearty, tangy twist.

When the teenagers caught on, this dish quickly became our go-to recipe for easy meal prep. The kids love adding lean protein to their diet lately, so these cottage cheese sweet potato beef bowls fit perfectly into our weekly rotation.

Sweet Potato Taco Bowl Recipe

Ingredients

The best part is that this viral recipe uses only a few simple ingredients that you probably already have in your pantry!  A full list of ingredients, instructions and nutritional information can be found in the recipe card below.

  • Lean ground beef – you can substitute for ground chicken or ground turkey for an even higher protein option.
  • Cottage cheese – I like to use Dairyland 4%. You could substitute with Greek yogurt if you want.
  • Diced sweet potato – you’ll need at least one large sweet potato.  They’re naturally sweet and rich in fibre.
  • Avocado, diced – this super food is full of healthy fats!
  • Package of taco seasoning – or use my homemade taco seasoning recipe that starts with chili powder, garlic powder, onion powder, smoked paprika, cumin, sea salt and pepper.
  • Hot honey – or use my simple hot honey recipe that uses honey, chili flakes and apple cider vinegar (full recipe in the recipe card below).

Instructions

  1. Combine the honey and chili flakes in a small microwave-safe bowl. Microwave for 15-20 seconds to boil the honey, then set aside to cool and allow the chili to infuse into the honey for 10-15 minutes.
  2. Strain the flakes from the honey using a fine sieve strainer. Add the apple cider vinegar and stir to combine. Adjust for taste by adding more honey if needed.
  3. Peel and dice the sweet potato. Sprinkle with olive oil and a pinch of salt.
  4. Roast them on a parchment paper lined baking sheet in a preheated oven at 350°F for 30 minutes until tender. You can also cook them in an air fryer at 425°F for 10 minutes until golden brown – toss them half way so that they cook evenly.
  5. On medium-high heat in a large skillet, brown the ground beef, breaking it up as it cooks with a wooden spoon. Add taco seasoning and stir, then set aside.
  6. Now assemble your sweet potato taco bowls. Add cooked sweet potatoes, taco-seasoned beef, creamy avocado and cottage cheese. Top with spicy hot honey for extra flavor.
