Why You’ll Love This Recipe
This French onion pasta is everything we love about comfort food in one pot. Itโs rich, cheesy, and full of deep caramelized onion flavor, but still easy enough to throw together on a busy weeknight. Plus, fewer dishes? Always a yes.

This pasta has that same cozy, savory vibe as French onion soup, but with way less fuss and way more โcan I have seconds?โ
I started making this on a night when I wanted something simple but still a little elevatedโyou know, like weโre pretending weโre fancy but also still wearing sweatpants. Martin loved it immediately, and the boys? Letโs just say there were zero leftovers, which is basically the highest compliment in our house.

Ingredients
- 2 tbsp unsalted butter โ adds richness and helps caramelize the onions to golden perfection
- 2 large white onions, thinly sliced โ the star of the show, bringing that classic sweet and savory French onion flavor
- ยฝ tsp salt โ enhances the flavor of the onions as they cook down
- ยผ tsp pepper โ adds a subtle warmth and seasoning throughout the dish
- ยผ cup red wine (or additional stock or broth) โ helps deglaze the pan and adds depth of flavor
- 2 cups chicken stock or broth โ creates a savory base that mimics French onion soup
- 2 cups short dry pasta, such as rigatoni, fusilli or elbow โ perfect for soaking up all that delicious sauce
- Fresh thyme โ adds a fresh, herby note that pairs beautifully with the onions
- 1/3 cup finely shredded Gruyรจre cheese, reserve some for topping โ melts into a creamy, nutty finish

Instructions
1. In a large pot or casserole dish over medium heat, melt the butter. Add the onions and salt, stir, cover and cook for 5 minutes.

2. Uncover and cook, stirring occasionally, until the onions are nicely browned in spots and the bottom of the pot is covered with stuck-on bits, 20 to 25 minutes.
3. Add the wine to deglaze by scraping up any browned bits stuck to the bottom of the pot.

4. Add the stock or broth, pasta, thyme, and pepper, cover partially and increase the heat to bring to a boil.
5. Cook, stirring occasionally and adjusting the heat as needed to keep the mixture at a gentle boil, until the pasta is al dente and the liquid has reduced to coat the pasta, 15 to 20 minutes

6. Remove from the heat, discard the thyme and stir in the cheese until melted. Taste, and season with more salt and/or pepper, if needed.

7. Divide among bowls, sprinkle with more cheese and serve.

Recipe Notes
- Be patient with the onions. The longer they cook, the more flavor youโll getโdonโt rush this step.
- Use a good quality broth. Since itโs a key flavor, a rich broth makes a big difference.
- Stir occasionally while the pasta cooks. This helps prevent sticking and keeps everything evenly coated.
- Try different pasta shapes. Short pasta with ridges holds onto the sauce best.
- Add extra cheese on top. Because honestly, thereโs no such thing as too much Gruyรจre here.

Frequently Asked Questions
Can I make this without wine?
Yes! Simply substitute with additional broth. Youโll still get a delicious result with plenty of flavor.
What can I use instead of Gruyรจre cheese?
Swiss cheese or mozzarella both work well if you donโt have Gruyรจre on hand.
Can I add protein to this dish?
Absolutely. Cooked chicken, sausage, or even shredded beef would be amazing stirred in at the end.
