Why You’ll Love This Recipe

This French onion pasta is everything we love about comfort food in one pot. Itโ€™s rich, cheesy, and full of deep caramelized onion flavor, but still easy enough to throw together on a busy weeknight. Plus, fewer dishes? Always a yes.

This pasta has that same cozy, savory vibe as French onion soup, but with way less fuss and way more โ€œcan I have seconds?โ€

I started making this on a night when I wanted something simple but still a little elevatedโ€”you know, like weโ€™re pretending weโ€™re fancy but also still wearing sweatpants. Martin loved it immediately, and the boys? Letโ€™s just say there were zero leftovers, which is basically the highest compliment in our house.

Recipe Notes

  • Be patient with the onions. The longer they cook, the more flavor youโ€™ll getโ€”donโ€™t rush this step.
  • Use a good quality broth. Since itโ€™s a key flavor, a rich broth makes a big difference.
  • Stir occasionally while the pasta cooks. This helps prevent sticking and keeps everything evenly coated.
  • Try different pasta shapes. Short pasta with ridges holds onto the sauce best.
  • Add extra cheese on top. Because honestly, thereโ€™s no such thing as too much Gruyรจre here.
