What makes these cookies so great?

The trick is in the instant vanilla pudding mix!  Did you know that dry pudding mix makes for the best chewy cookies?

Ingredients

These chewy pudding cookies start with a few simple ingredients from the grocery store.

  • Unsalted butter, room temperature
  • Granulated white sugar
  • Large egg
  • Pure vanilla extract
  • All-purpose flour
  • Small box vanilla instant pudding mix
  • Baking soda
  • Salt
  • White chocolate chips
  • Rainbow sprinkles

Instructions

You can make this in the bowl of a stand mixer with the paddle attachment or use a large mixing bowl with a hand mixer.

1. Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper.

2. In a large bowl cream butter and sugar together.

3. Add vanilla and egg.

4. Mix until well combined.

5. Add the vanilla pudding mix to the wet ingredients and mix well.

6. Add remaining dry ingredients and mix again.

7. Mix in white chocolate chips and 1 Tbsp of the sprinkles to form a cookie dough.

8. Use a cookie scoop to drop dough balls onto the prepared baking sheet.

9. Pour the remaining sprinkles into a small dish and roll the cookie dough ball into the sprinkles

10. Bake for 8-10 minutes until the edges just start to turn golden brown.

11. Move to a wire rack to cool and store in an airtight container.
