Lemon Greek Potatoes Recipe

These zesty lemon Greek potatoes are crispy on the outside and fluffy inside, with a burst of citrus and herbs. They are the perfect side dish to complement any meal!

Mashed, roasted, or baked, we love potatoes in all their many forms. I have tried a lot of different recipes over the years!

Today’s recipe is a delicious lemony version that may just be my new favorite way to eat these versatile veggies.

These roasted potato wedges pair wonderfully with grilled meats or as a stand-alone dish at any gathering. I think they would be delicious along side fresh salmon burgers, grilled pork loin, or this air fryer whole chicken.

You could also turn dinner into a complete Greek feast by adding tzatziki Greek cucumber salad, Greek chicken skewers (or your protein of choice), and your favorite pitas to the menu. Yummy!

Lemon Greek Potatoes

Prep time: 15 minutes

Baking time: 45-55 minutes

Total time: 60-70 minutes

Raw whole potatoes, whole lemons, garlic cloves, parsley in a prep bowl, vegetable broth in a glass prep bowl, salt & pepper in measuring spoons, oil in a measuring cup.

Ingredients

  • Potatoes, cut into wedges – I find that starchy potatoes, like Yukon golds or Russets, are the best for getting really crispy, fluffy results.
  • Olive oil – Adds richness and helps everything roast to that perfect golden-brown finish.
  • Vegetable broth – Keeps the potatoes moist and adds extra flavor.
  • Lemon (for juicing) – Brightens up the dish with a refreshing tang.
  • Dried oregano – Gives a warm, herby taste that’s comforting and delicious.
  • Salt – Enhances all the flavors, making them pop.
  • Black pepper – Adds a subtle kick and depth of flavor.
  • Lemons (for slicing) – Great for a burst of zest and a pop of color.
  • Garlic cloves – Fresh garlic delivers a savory aroma and tasty flavor boost.
  • Fresh parsley, chopped, for garnish – Freshens up the dish and adds a nice touch of color.

Instructions

1. Preheat the oven to 400°F (200°C).

2. Place the potato wedges onto a rimmed baking sheet.

3. In a separate bowl, mix together the vegetable broth, lemon juice, olive oil, oregano, salt, and pepper.

4. Pour this liquid mixture over the potato wedges.

5. Press the garlic cloves using a garlic press and then evenly distribute the minced garlic over the potato wedges. Sprinkle chopped parsley over the potato wedges.

6. Place the lemon slices from the second lemon on top of the potato wedges for garnish.

7. Bake in a preheated oven for 45-55 minutes, or until the potatoes are golden-brown and fork tender.

8. Garnish with additional chopped parsley before serving.

Tips and Tricks

  • Cut the potatoes evenly to ensure they cook at the same rate and get that perfect crispy texture.
  • For extra zing, let the lemon juice sit with the broth and oil for a few minutes before pouring it over the potatoes.
