How to Make Greek Chicken Skewers

Ingredients

For the Skewers
  • Chicken โ€“ Mild, juicy, and perfect for soaking up every droplet of the marinade.
  • Bell pepper โ€“ Adds crunch, color, and just the right balance to the veggies on each chicken skewer.
  • Red onion โ€“ Adds sweetness and caramelizes beautifully on the grill.
  • Tomatoes โ€“ Juicy little bursts of flavor that balance the savory chicken.
For the Marinade
  • Olive oil โ€“ The silky base that helps all those bold Greek flavors cling to the chicken.
  • Lemon juice โ€“ Adds a bright tangy punch.
  • Dried oregano โ€“ The classic Greek herb that instantly makes the marinade smell vacation-worthy.
  • Minced garlic โ€“ Always a flavor powerhouse that makes everything better.
  • Dried parsley โ€“ Adds a soft, herby freshness so your marinade doesnโ€™t feel too heavy.
  • Cumin โ€“ Provides a warmth that balances the citrus beautifully.
  • Red pepper flakes โ€“ Just enough heat to keep things interesting without scaring anyone off.
  • Salt & pepper โ€“ The simple duo that pulls all the ingredients together.

Tips and Tricks

  • Keep the chicken and veggie pieces roughly the same size so they cook evenly.
  • If grilling at the campsite, freeze the skewers flat so they double as ice packs in your cooler.
  • Add a sprinkle of lemon juice after grilling for an extra burst of bright flavor.
  • Let the skewers rest off the grill for a few minutes before eating so the juices settle back into the meat.
  • Toss any leftovers into sandwiches or bowls with rice and extra veggies for an easy next-day meal.
  • Soak wooden skewers in water before adding your ingredients to keep them from scorching when cooked.
