What makes these strawberry cookies so good?
The secret to the best tasting strawberry cookie is in using freeze-dried strawberries. They give these cookies that fresh berries taste that everyone loves.
Freeze dried strawberries are really key! I used the ones from Trader Joes, placed them into a freezer bag and crushed them into a fine powder.
If you can’t find freeze dried strawberries, not to worry, I’ve listed a few alternatives below.

Tips & Tricks
- If you can’t find freeze dried strawberries you could also use dehydrated strawberries and simply grind them finely in a food processor.
- In a pinch, strawberry jello powder may be substituted for the powdered strawberries. The two ingredients are interchangeable, as long as you have one you will get that yummy strawberry flavor.
- Vanilla bakers chocolate, chopped into white chocolate chunks can be used instead of white chocolate chips.
- Extra gel food coloring is optional but gives these cookies that bright pink color.
Easy Strawberry Pudding Cookies Recipe
Add these flavourful cookies to your must bake list! They’re quick and easy to make and always a crowd favorite.
We had friends and family do a taste test and tell us which they liked better, these strawberry cookies or the lemon pudding ones. It was a tie! So, you’ll simply have to make them both and tell us which one is your favorite.
Ingredients
This recipe starts with a few simple ingredients from the grocery store!
- Unsalted butter, room temperature
- Granulated white sugar
- Large egg
- Pure vanilla extract
- All-purpose flour
- 3.4 oz box instant vanilla pudding mix
- Freeze dried strawberries, crushed into powder
- Strawberry Jello powder
- Baking soda
- Salt
- White chocolate chips
- Red food coloring, optional
Instructions
You can use a stand mixer with paddle attachment or a handheld mixer.
1. Line a cookie sheet with parchment paper and preheat the oven to 350 degrees. F.
2. In a large mixing bowl combine the sugar and softened butter.
3. Add vanilla and egg.
4. Mix wet ingredients until well combined.
5. Add the dry ingredients to the large bowl and mix again.
6. As an optional step, add a few drops of red food coloring into the bowl to increase the pink color of your cookie dough.
7. Mix in white chocolate chips to form a cookie dough.
8. Use a cookie scoop to drop the strawberry cookie dough onto the prepared baking tray.
9. Bake for 10 – 12 minutes.
10. Move the cookies to a cooling rack to cool.
Store in an airtight container for a week or in a bag in the freezer for months (if they last that long).
