Chicken Breast Skillet Recipe:

Ingredients:

  • 2 Tbsp olive oil
  • 4 boneless skinless chicken breasts
  • 1 tsp Italian seasoning
  • 1 tsp minced garlic
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 cup heavy whipping cream (35%)
  • 1 cup fresh spinach
  • 1/2 cup sundried tomatoes, oil drained
  • Parmesan cheese, garnish
  • 2 Tbsp lemon juice

Directions:

1. Heat oil in a cast iron skillet over medium heat.

2. Season the chicken breasts with Italian seasoning, salt and pepper then place in the hot skillet.

3. Sear the chicken for 4-5 minutes on one side, then flip and continue to cook for 4-5 more minutes.

4. Add the chicken broth to the skillet and increase heat to medium-high.

5. Once the chicken broth is simmering, add the heavy whipping cream and then reduce heat to medium.

6. Allow the liquid to simmer until reduced by half, about 8 minutes.

7. Add the spinach and sundried tomatoes to the skillet until spinach is completely wilted.

  • Getting a nice sear on your meat ensures you end up with really juicy chicken. All of those brown bits left on the bottom of the pan add great flavour to the pan sauce too. 
  • Pat chicken dry with a paper towel before you season it. Removing any excess water helps create that golden brown colour when searing. 
  • Be sure to use a clean cutting board after working with raw meat. You want to avoid cross-contamination.
