My favorite way to make this baked potato casserole is by using leftover mashed potatoes. Whenever we cook for the holidays I always make a huge pot of mashed potatoes just so that we can have leftovers!

You don’t need leftovers to make this tasty recipe but having them speeds up the whole process.

Twice baked mashed potato recipe:

Ingredients:

  • 2 lbs russet potatoes, peeled and diced
  • 1/4 cup butter
  • 3/4 cup herb and garlic cream cheese
  • 2 cups cheddar cheese, shredded and divided
  • 1/2 cup (2 stalks) green onion, diced
  • 4 pieces of bacon, cooked and diced

Tip: use leftovers from these herb&garlic mashed potatoes instead of making potatoes from scratch. You will need about 4 cups of mashed potatoes.

Directions:

1. Place potatoes in a large pot, cover with water and bring to a boil over medium high heat. 

2. Cook for 15-20 minutes or until potatoes are fork tender.

3. Drain water from cooked potatoes.

4. In a large bowl combine potatoes, butter, cream cheese and half of the cheddar cheese.

5. Use a potato masher or hand held mixer to mash potatoes until smooth.

6. Spread the creamy mashed potatoes evenly in a 9×12 casserole dish.

7. Top with remaining cheese and bacon.

8. Place in the oven at 350 for 30 mins

Tips and tricks:

  • Leftovers may be covered with plastic wrap or stored in an airtight container for up to a week in the fridge.
  • Add garlic cloves to the boiling potatoes for a more garlic-why flavor.
  • Use yukon gold potatoes or red potatoes instead of russet.
  • heavy cream may be used instead of butter
  • Top with sour cream, crispy bacon or fresh chives.
