Ingredients

  • 2 lbs russet potatoes peeled and diced
  • ¼ cup butter
  • ¾ cup herb and garlic cream cheese
  • 2 cups cheddar cheese shredded and divided
  • ½ cup 2 stalks green onion, diced
  • 4 pieces of bacon cooked and diced

Instructions

  • 1. Place potatoes in a large pot, cover with water and bring to a boil over medium high heat. 
  • 2. Cook for 15-20 minutes or until potatoes are fork tender.
  • 3. Drain water from cooked potatoes.
  • 4. In a large bowl combine potatoes, butter, cream cheese and half of the cheddar cheese.
  • 5. Use a potato masher or hand held mixer to mash potatoes until smooth.
  • 6. Spread the creamy mashed potatoes evenly in a 9x12 casserole dish.
  • 7. Top with remaining cheese and bacon.
  • 8. Place in the oven at 350 for 30 mins.
  • 9. Top with green onions and serve.
