I am a sucker for easy holiday treats, especially easy to make ones! With a pack of teenage boys in the house I am not too sure that they appreciate how darling these look, but I do know that they are quite happy to eat them.

Were they still in elementary school I would totally make these cookie bars for them to take and share with classmates. I miss the days of volunteering in their classroom and helping with Valentine’s Day parties and events at school!

These bars are a great alternative to the work that goes into individual cookies made with cookie cutters and cream cheese frosting.

Sugar cookie dough is super versatile and easy to make with only a few ingredients from the grocery store. Start with butter, granulated sugar, all purpose flour and a splash of vanilla extract.

Tips & Tricks

  • If you’re short on time but still want to make these festive cookie bars, use pre-made sugar cookie dough. It’s a huge time-saver and can still yield delicious, perfectly soft bars that are easy to decorate.
  • After mixing the dough, let it chill in the refrigerator for 10-15 minutes. This helps the dough firm up, the bars bake more evenly and hold their shape better.
  • While Valentine sprinkles are a fun way to decorate, feel free to get creative with your toppings! You can mix in mini chocolate chips, red and pink candy-coated chocolates or even heart-shaped candies for a personalized touch.
  • A square 8×8-inch pan works perfectly for these cookie bars, yielding 16 nicely-sized portions. If you prefer thinner bars, you can use a larger pan (like a 9×12 inch) but be sure to adjust the baking time accordingly. Check with a toothpick for doneness.
  • After baking, let your Valentine cookie bars cool completely on a wire rack before spreading frosting. This prevents the frosting from melting into the warm bars and ensures a thick, even layer of frosting that sticks well to the surface.

Frequently Asked Questions

Can I use margarine instead of butter in this recipe?
Yes! Butter is the best option for flavor, but feel free to use margarine or shortening in a pinch.

How do I store these cookie bars?
To keep them fresh, store the bars in an airtight container at room temperature for up to a week. If you need to keep them longer, you can freeze them in a large freezer bag or airtight container for up to 3 months. Just be sure to separate layers with parchment paper to avoid sticking.

Can I make these ahead of time?
Absolutely! These Valentine cookie bars can be made a day or two ahead of time. Simply bake and let them cool completely before frosting. Store them covered at room temperature until you’re ready to serve. Frost them the day you plan to serve them to keep the frosting looking fresh.

I tried this recipe today! 1 tsp of baking soda ruined it. It was all I could taste. Maybe should have used baking powder!
