Keto Creamy Cauliflower and Bacon Soup Recipe

This keto cauliflower and bacon soup recipe is absolutely delicious and creamy. You won't believe that this dish is low carb!

Ingredients

  • 2 cups cauliflower riced
  • 1/2 cup heavy cream
  • 1/2 onion diced
  • 2 celery stalks diced
  • 8 cups chicken stock
  • 2 slices of bacon diced
  • 1 green onion stalk diced
  • 1/4 cup grated cheddar cheese
  • salt & pepper to taste

Instructions

  • 1. Add cauliflower, celery, onion and chicken stock to a large stock pot.
  • 2. Bring to a rolling boil and simmer for 20 minutes.
  • 3. Add cream and salt & pepper to taste.
  • 4. Allow the soup to cool slightly before using an emersion blender to blend all of the ingredients together.  This is the emersion blender that I use.
  • 5. Once everything is blended smooth, add half of the bacon bits, return the soup to the stove and heat on medium.  Cook for another 10 minutes.
  • 6. To serve, top with remaining bacon bits, cheese and green onion.
