Ingredients

cauliflower
riced
½
cup
heavy cream
½
onion
diced
2
celery stalks
diced
8
cups
chicken stock
2
slices
of bacon
diced
1
green onion stalk
diced
¼
cup
grated cheddar cheese
salt & pepper to taste

Instructions
1. Add cauliflower, celery, onion and chicken stock to a large stock pot.
2. Bring to a rolling boil and simmer for 20 minutes.
3. Add cream and salt & pepper to taste.
4. Allow the soup to cool slightly before using an emersion blender to blend all of the ingredients together. This is the
emersion blender
that I use.
5. Once everything is blended smooth, add half of the bacon bits, return the soup to the stove and heat on medium. Cook for another 10 minutes.
6. To serve, top with remaining bacon bits, cheese and green onion.
