1. Prepare ingredients. Tip: dice the veggies and ham at home and pack in a freezer bag to use later. 2. Add oil, veggies and ham to a skillet. 3. Cook over the fire or grill for 5-10 minutes or until onion is opaque. 4. Add an egg and cook for an additional 5 minutes. 5. Top with cheese and season with salt & pepper.
