This delicious breakfast is the perfect way to use up ingredients in the fridge. We often add hash browns, green onions, bacon, maple syrup, cheddar cheese, cooked sausage, sweet potato, hot sauce, and cherry tomatoes if we have them.

  • Bell pepper, diced โ€“ Adds a pop of color and a slightly sweet crunch that pairs perfectly with savory breakfast ingredients.
  • White onion, diced โ€“ A classic skillet base that becomes deliciously soft and flavorful when cooked over the fire.
  • Ham, diced โ€“ Salty, smoky ham adds hearty protein that makes this camping breakfast extra filling.
  • Eggs โ€“ The star of this recipe, cooked right on top for a rich and satisfying campfire breakfast.
  • Cheese, shredded โ€“ Melts into gooey goodness over the warm skillet, adding creamy flavor to every bite.

Instructions

1. Prepare ingredients.

Tip: Prepare as many of your ingredients as possible at home to make cooking while camping easier. I like to dice the onion, green pepper, and ham beforehand and store it in a freezer bag for camping.

2. Add oil, veggies, and ham to a skillet.

3. Cook over the fire or grill on medium heat for 5-10 minutes or until onion is opaque.

4. Add an egg and cook for an additional 5 minutes or until the fried egg reaches your desired doneness.

5. Top with shredded cheese and season with salt and pepper.

Tips For Cooking With Cast Iron

  • When cooking with cast iron, be sure to season the surface first.
  • Always use gloves or oven mitts while cooking, as the surface of the iron will be hot.
  • Cook the recipe over an open fire using hot coals, not open flames. A fire that is too hot will burn the outside of your recipe and not cook the inside.
  • Be sure to clean the cast iron with a rough vegetable scrubber, rinse, and dry thoroughly before storing.
