Ingredients

  • 3/4 cup butter room temperature
  • 1 cup granulated white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 2/3 cup all-purpose flour
  • 1 small box pistachio instant pudding mix 3.4 oz
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • 1/2 cup pistachios. chopped
  • Green food coloring optional

Instructions

  • 1. In a large mixing bowl combine the sugar and softened butter.
  • 2. Add vanilla and egg.
  • 3. Mix until well combined.

    4. Add the dry ingredients and mix again.
  • 5. Mix in white chocolate chips and chopped pistachios to form a cookie dough.
  • 6. Use a cookie scoop to drop dough balls onto a parchment paper lined baking sheet.
  • 7. Bake for 8 - 10 minutes at 350 degrees.
