1. In a large mixing bowl combine the sugar and softened butter.
2. Add vanilla and egg.
3. Mix until well combined. 4. Add the dry ingredients and mix again.
5. Mix in white chocolate chips and chopped pistachios to form a cookie dough.
6. Use a cookie scoop to drop dough balls onto a parchment paper lined baking sheet.
7. Bake for 8 - 10 minutes at 350 degrees.
