Ingredients

  • 2 salmon filets 6 ounces each, skin removed
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 3 garlic cloves minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat the oven for 400 F.
  • Line a baking sheet with parchment paper.
  • Remove the skin from the salmon filets. Pat them dry with paper towels.
  • Cut salmon into bite-sized pieces, about 1 inch square.
  • Combine olive oil, salt, pepper, minced garlic, and lemon juice in a medium bowl. 
  • Pour the garlic sauce over the salmon cubes and gently toss.
  • Marinate the salmon in the sauce for about 10 minutes.
  • Spread the salmon pieces out in a single layer on the prepared baking sheet.
  • Bake salmon at 400 F for 15-20 minutes, or until cooked through.
  • Remove from the oven and let the salmon bites cool for 4-5 minutes before serving.

Notes

  • The easiest way to ensure the fish is thoroughly cooked is to check the internal temperature with an instant read thermometer.
  • Make blackened salmon bites by coating the fish in a combination of spices that include paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne, and brown sugar.
  • Add a crispy coating to the salmon with panko breadcrumbs for another variation.
  • Adding bang bang sauce or hot honey is a great way to spice up this dish!
  • Store leftovers in an airtight container in the fridge for up to three days.
