Chicken Bacon Ranch Foil Packs

Ingredients

  • 4 boneless skinless chicken breasts cut into strips
  • 1 packet of Hidden Valley Ranch seasoning mix
  • 2 cups small yellow gold potatoes halved
  • 1 cup cheddar cheese shredded
  • 4 slices of bacon cooked
  • Fresh parsley garnish

Instructions

  • Preheat oven to 400 degrees F.
  • Cut up the potatoes and slice the chicken.
  • Cook the bacon.
  • Place potatoes in a medium bowl and microwave for 3-4 minutes so that they are slightly cooked. This helps to create tender potatoes done to perfection at the same time as our chicken.
  • Divide the ingredients equally onto four pieces of aluminum foil (about 12” long).
  • Layer potatoes, chicken, cheese, and bacon, then sprinkle the ranch seasoning equally over top.
  • Fold aluminum foil into a packet.
  • Place the sealed packet directly onto the wire rack of the oven.
  • Cook for 20-25 minutes or until the chicken is completely cooked.
  • Move to a flat surface and open packets carefully.
  • Garnish with parsley on top of each foil meal.

Notes

  • You can throw the chicken in a mixing bowl with the seasoning, but cleanup is much easier if you do it all on the foil sheet.
  • Chicken is done when a meat thermometer inserted into the center of thickest part of the meat reads 160 degrees F. Cook time depends on the size of your chicken breasts, so be sure to cut the chicken into equal pieces for even cooking.
  • The packets can be placed on a baking sheet if you are worried about them leaking in the oven.
  • To help prevent things from sticking to the foil, you can use non-stick cooking spray on the inside of the tin foil packet.
  • You can also cook them over the open flame of a fire pit on a grate over medium heat. Use sheets of heavy-duty foil to help prevent the aluminum from tearing.
  • Open these chicken foil packets carefully, as they will be hot! It's a good idea to use oven mitts.
  • Transfer any leftovers to an airtight container to keep in the fridge for a few days.
