The Best Chicken Bacon Ranch Foil Pack Recipe

Foil packet meals are something that our whole family loves and I love how perfect these easy recipes are for a busy weeknight.  These bacon ranch chicken foil packets are always a family favorite!

We especially love individual foil packets because they make the best all in-one meal that is easy to serve in the great outdoors.  Serve this juicy chicken with our foil packet potatoes recipe or grilled corn salad recipe.

Of course, foil pack meals are great any time of year but they are especially awesome for grilling season and make the perfect easy campfire dinner.

One of my favorite things to do in the spring is plan all of our summer trips and that often includes adding these chicken bacon ranch foil packets to our menu planning.

Tips for this recipe

  • The packets can be placed on a baking sheet if you are worried about them leaking in the oven.
  • To help prevent things from sticking to the foil, you can use non stick cooking spray on the inside of the tin foil packet.
  • You can also cook them over the open flame of a fire pit on a grate over medium heat.  Use sheets of heavy-duty foil to help prevent the aluminum from tearing.
  • Open these chicken foil packets carefully as they will be hot! It’s a good idea to use oven mitts.
  • Transfer any leftovers to an airtight container to keep in the fridge for a few days.

How do you fold a foil packet?

  • For best results, start by pulling the sides of foil up to meet in the center.
  • Fold the two edges together tightly along the entire length, a 1 to 2-inch fold is ideal.
  • Finally, seal edges by rolling up the ends of each piece of tin foil to create a packet.

These foil dinners may be cooked in the oven or on the charcoal grill.  The directions in the recipe card below are for baking in the oven.  If you would prefer grilling, simply preheat the grill to 400 degrees, place foil packets on the grill grates and cook for 8-10 minutes.

Ingredients

The good news is that this recipe uses simple ingredients that the entire family is sure to love!

  • Boneless skinless chicken breasts, cut into equal strips
  • A packet of Hidden Valley Ranch seasoning mix
  • Small yellow gold potatoes, halved
  • Cheddar cheese, shredded
  • Slices of bacon, cooked
  • Fresh parsley, garnish

Instructions

1. Pre heat oven to 400 degrees F.

2. Cut up the potatoes and slice the chicken.

Tip: you can throw the chicken in a mixing bowl with the seasoning but clean up is much easier if you do it all on the foil sheet.

3. Cook the bacon in a frying pan.

4. Place potatoes in a medium bowl and microwave for 3-4 minutes so that they are slightly cooked.  This helps to create tender potatoes done to perfection at the same time as our chicken.

5. Divide the ingredients equally onto four pieces of aluminum foil (about 12” long).

6. Layer potatoes, chicken, cheese and bacon, sprinkle the ranch seasoning equally over top.

7. Fold aluminum foil into a packet.

8. Place the sealed packet directly onto the wire racks in the oven.

9. Cook for 20-25 minutes or until the chicken is completely cooked.

Tip: chicken is done when a meat thermometer inserted into the center of thickest part of the meat reads 160 degrees F.  Cook time depends on the size of your chicken breasts so be sure to cut the chicken into equal pieces for even cooking.

10. Move to a flat surface and open packets carefully.

11. Garnish with parsley on top of each foil meal.

Substitutions

Why not try some of these variations?

  • Add green beans or a cup of broccoli to the recipe
  • Green onions or diced white onion would be a great additions
  • Small red potatoes may be used instead of yellow
  • Other cuts of chicken like thigh work too
  • As the cheese and bacon cooks, they add oil to the packet, helping to create crispy potatoes and juicy chicken.  You can add an extra drizzle of olive oil but it’s not usually needed.
  • Garlic powder, onion powder or salt and pepper may be added
  • Topping this with sour cream or salsa would be delicious
