- These foil dinners may be cooked in the oven or on the charcoal grill.ย The directions in the recipe card below are for baking in the oven. If you would prefer grilling, simply preheat the grill to 400 degrees, place foil packets on the grill grates, and cook for 20-25 minutes.
- The packets can be placed on a cookie sheet if you are worried about them leaking in the oven.
- To help prevent things from sticking to the foil, you can use nonstick cooking spray on the inside of the tinfoil packet.
- You can also cook them over the open flame of a fire pit on a grate over medium heat. Use sheets of heavy-duty foil so that the aluminum doesn’t tear.
- Open these chicken foil packets carefully as they will be hot! It’s a good idea to use oven mitts.
- Transfer any leftovers to an airtight container to keep in the fridge for a few days.

How Do You Fold a Foil Packet?
- For the best results, start by pulling the sides of foil up to meet in the center.
- Fold the two edges together tightly along the entire length. A 2-inch fold is ideal.
- Finally, seal edges by rolling up the ends of the foil to create a packet.

The good news is that this recipe uses simple ingredients that the entire family is sure to love.
- Boneless skinless chicken breasts, cut into strips โ Tender, lean protein that cooks quickly and absorbs all those bold salsa flavors beautifully.
- Zucchini, sliced โ A soft, mild veggie that adds a fresh bite and cooks perfectly inside the foil without getting mushy.
- Red bell pepper, sliced โ Sweet and vibrant, this adds color and a little crunch.
- Green or yellow bell pepper, sliced โ Slightly earthy and crisp, these peppers round out the veggie mix.
- Olive oil โ Keeps everything moist and helps prevent sticking.
- Homemade salsa โ The star of the show, bringing bold, zesty flavor and just the right amount of saucy goodness.
- Tex Mex cheese, shredded โ A melty blend that adds creamy, cheesy comfort to every bite.
- Jalapeno pepper, sliced (optional) โ Adds a spicy kick.
- Green onions โ Fresh and slightly sharp, they brighten up the finished dish.
- Salt and black pepper โ Simple seasonings that enhance all the other flavors.

Instructions
1. Preheat oven to 400 degrees F.
2. Cut up the vegetables and slice the chicken.
Tip: Place the ingredients into a medium bowl and toss with oil or avoid the extra cleanup and just drizzle the oil over the ingredients on the foil sheet.

3. Divide the ingredients equally onto four sheets of foil (about 12โ long).
4. Drizzle with olive oil. Top with 1 cup salsa and cheese.
5. Fold aluminum foil into a packet.
6. Place packs directly onto the wire rack of the oven.
7. Bake for 20-25 minutes or until the chicken is completely cooked.
Tip: Chicken is done when a meat thermometer inserted into the center of thickest part of the meat reads 165 degrees F. Cook time depends on the size of your chicken breasts, so be sure to cut the chicken into equal pieces for even cooking.
