Tips and Tricks
- These foil dinners may be cooked in the oven or on the grill. The directions in the recipe card below are for baking in the oven. If you would prefer grilling, simply preheat the grill to 400 degrees, place foil packets on the grill grates, and cook for 8-10 minutes.
- You can also cook them over the open flame of a fire pit on a grate over medium heat. Use heavy duty foil to help prevent the aluminum from tearing.
- The packets can be placed on a baking sheet if you are worried about them leaking in the oven.
- To help prevent things from sticking to the foil, you can use non-stick spray on the inside of the square of foil.
- Open packets carefully, as they will be hot! It’s a good idea to use oven mitts or tongs.
- Transfer any leftovers to an airtight container to keep in the fridge for a few days.

How to Fold a Foil Packet
- For best results, start by pulling the sides of the foil up to meet in the center.
- Fold the two edges together tightly along the entire length. A 1″ fold is ideal.
- Finally, the easiest way to seal the ingredients in is to roll up the ends of the foil to create the packet.

The secret to this recipe is really the savory teriyaki sauce. It’s super easy to make with a bit of soy sauce, brown sugar, ginger, and honey.
Ingredients
The good news is that this recipe uses simple ingredients that the entire family is sure to love!
- Boneless skinless chicken breasts, cut into strips โ Tender, protein-packed chicken that cooks quickly and absorbs all that sweet and savory teriyaki flavor.
- Broccoli florets โ Fresh, crisp broccoli adds color, crunch, and a healthy boost that pairs perfectly with the sauce.
- Bell peppers, cubed โ Bright, colorful peppers bring a pop of flavor, crunch, and just the right amount of natural sweetness.
- Yellow onion, diced โ Mild and slightly sweet, this onion softens beautifully and adds depth to every bite.
- Homemade teriyaki sauce, divided โ Homemade or store-bought, it delivers sweet, salty, sticky flavor.
- Green onions (optional) โ Fresh and slightly sharp, these add a pop of flavor and a pretty finishing touch.
- Sesame seeds (optional) โ A simple garnish that adds a subtle nutty flavor.

Instructions
1. Preheat the oven to 400 degrees F.

2. Cut up the vegetables and slice the chicken.
Tip: At this point, you can add everything to a large bowl and coat with a cup of teriyaki sauce, but I often skip this step and just assembleย on the foil to avoid extra cleanup.

3. Divide the ingredients equally onto four sheets of foil (about 12โ long).

4. Top with half of the teriyaki sauce.

5. Fold each sheet of foil into a packet.

6. Place the foil packets directly onto the wire rack of the oven.
7. Bake for 20-25 minutes or until the chicken is completely cooked.

8. Carefully remove from the oven and place on a cookie sheet.
9. Open each packet and top with remaining cup of teriyaki sauce.

10. Garnish with green onions and sesame seeds.
