Potato and Onion Foil Packs

This potato and onion foil packet recipe is a summer time staple and the perfect side dish for grilling and camping!

These easy grilled potatoes make the perfect side dish for beer can chicken, BBQ hot dogs or smoked brisket. This is my favorite way to cook potato slices and onion because the foil packet makes clean up a breeze!

What types of potatoes work best?

We like to use yukon gold potatoes, red potatoes or white potatoes because they don’t require peeling and are less starchy than other potato varieties. You could certainly use russet potatoes as well, just be sure to peel the skin from the potato before slicing.

We have also used baby potatoes and fingerling potatoes to create potato foil packets. The key is just making sure that the potatoes are all of a uniform size so that they cook evenly in the foil.

Supplies:

Potato and Onion Foil Pack Ingredients

Ingredients:

  • 3-4 medium sized yellow potatoes, sliced
  • 1 large white onion, sliced
  • 4 Tbsp butter
  • 1 Tbsp green onions, diced
  • 1 tsp fresh parsley, chopped
  • Salt and black pepper to taste

Cut up the potatoes and onion however you want, just be sure they are the same sizes for even cooking. Larger vegetables can be cut into smaller pieces to allow for a quicker cooking time.

Directions:

1. Wash and slice the potatoes and onion.

2. Create a foil packet from aluminum foil torn to about 14″ in length.

3. Place the potato mixture in the center of the foil, top with butter and salt and pepper.

4. Seal edges of the packet by pulling up the long sides of the foil and creating a 2-inch fold at the top.

5. Fold up the sides of foil with a double fold to lock in all of the ingredients.

6. Heat grill to medium heat and place packets on the BBQ.

7. Bake for 45 minutes or until a fork can easily pierce the vegetables.

8. Open packets carefully and garnish with green onion and parsley before serving.

The great thing about potato recipes is how versatile they are! Every time that I make this delicious side dish I tweak it just a bit depending on what I have in the kitchen or pantry.

Add ins:

  • Red onions
  • Bell pepper
  • Zucchini
  • Mushrooms
  • Beets

Optional seasoning:

  • Ranch seasoning
  • Garlic powder
  • Italian seasoning
  • Fresh thyme

Try these toppings:

  • Grated cheddar cheese
  • A dollop of sour cream
  • Bacon bits
  • A sprinkle of parmesan cheese
  • Diced chives

We often plan to make these fully loaded campfire potatoes on each camping trip we have planned and simply cook them over the camp fire. Its a great way to make an effortless side dish with easy clean-up!

Tips for foil packet cooking:

Help prevent the potatoes from sticking to the sheets of foil by spraying the inside with cooking spray or brushing with olive oil.

Make full foil packet meals by adding chicken breast, summer sausage or salmon to the foil pack potatoes.
