Ingredients

  • 1 pound ground mild Italian sausage cooked & drained
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • ½ cup sun-dried tomatoes drained and chopped
  • 6 cups chicken broth
  • 1 ½ cup spinach chopped
  • ¾ cup heavy cream
  • ¼ cup freshly grated Parmesan cheese for serving

Instructions

  • Add first six ingredients to the crockpot.
  • Cook on low for four to six hours.
  • Half an hour before serving add spinach and cream.
  • Top with Parmesan before serving.
