I seriously love adapting our family favorite recipes to be low carb and keto friendly. This soup reminds me of the Italian wedding soup that we used to get at the Olive Garden!

How to make keto crockpot tuscan soup:

Ingredients that you will need:
- 1 pound ground mild Italian sausage, cooked & drained
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 cup sun-dried tomatoes, drained and chopped
- 6 cups chicken broth
- 1 1/2 cup spinach, chopped
- 3/4 cup heavy cream
- 1/4 cup freshly grated Parmesan cheese, for serving
- Add the first six ingredients to the crockpot.
2. Cook on low for four to six hours.
3. Half an hour before serving add spinach and cream.
4. Top with Parmesan before serving.
Tips for making this keto crockpot soup:
- hot Italian sausage can totally be substituted for mild
- fresh or frozen spinach both work for this dish
- adding riced cauliflower would make this recipe even more hearty
- this can be cooked on the stovetop in a large stock pot or in the Instant Pot. Simply saute the sausage until cooked through, add remaining five ingredients and simmer. Add spinach and cream and simmer an additional ten minutes.
