Freezer Camping Breakfast Sandwiches

These freezer camping breakfast sandwiches are the perfect make ahead meal for your next trip! Simply reheat them over the grill or campfire.

Ingredients

  • 8-10 large eggs
  • ¾ cup milk
  • 1 tsp salt & pepper
  • bagels
  • sliced cheddar cheese
  • sausage patties

Instructions

  • Preheat your oven to 375 degrees and spray a 9x13-inch pan with nonstick spray.
  • In a large bowl, whisk together the eggs, milk and salt & pepper.
  • Pour the egg and milk mixture into the pan and bake 24-30 minutes until the eggs are done. Then let cool.
  • Toast the bagels in toaster or under broiler until golden.
  • Using a large round cookie cutter or mason jar lid, cut the eggs. Try to have the cookie cutter be close in size to your bagels. Cut the eggs into six rounds.
  • Cook the sausage (or other protein as desired) until done. Then assemble your sandwiches.
  • On each of the bottom halves of the bagels add egg, a sausage patty and cheese. Top with the other half of the bagel and wrap in plastic wrap, and freeze for up to one month.
  • To reheat, remove the plastic wrap, wrap in tinfoil (if desired) and heat over the campfire or grill for 5-10 mins.
