Ingredients

  • 1 lb Lean ground turkey
  • 6 Corn tortillas

For Greek Salad

  • 1 Roma tomato about 1 cup, diced
  • ½ Long English cucumber about 1 cup, diced
  • ¼ Small white or red onion about ¼ cup, diced
  • ¼ cup Feta cheese crumbles
  • 1 Tbsp Greek dressing

For High Protein Tzatziki

  • 2 Tbsp Sour cream
  • 2 Tbsp Cottage cheese or plain Greek yogurt
  • 1 Tbsp Lemon juice
  • 2 Tbsp Finely diced cucumber
  • 1 tsp Dried dill or 1 Tbsp fresh dill

Instructions

  • In a medium bowl, combine tomato, cucumber, onion, feta, and dressing. Mix to combine.
  • In a separate small bowl, combine sour cream, cottage cheese, lemon juice, and dill. Use a hand blender to whip until smooth. Fold in finely diced cucumber.
  • Divide your pound of ground turkey into 10-12 portions. Place a generous scoop in the center of a tortilla, spreading it thin.
  • Heat a skillet over medium-high heat. One at a time, place the tortillas turkey-side down and cook until the meat side is golden brown, about 2-3 minutes.
  • Flip and cook another 1-2 minutes, until warm and slightly crispy.
  • Repeat until all of the tortillas have been cooked.
  • Top with homemade tzatziki and salad mixture.
