red onion
cut into 1" cubes

fresh grated ginger

coconut aminos
soy sauce can be substituted

granulated stevia
or white sugar

Instructions
Cut steak and onion into cubes.
Thread onto wooden skewers alternating steak, mushrooms, and onion.
Place into a large freezer-safe bag.
Pour remaining ingredients over skewers and freeze until needed.
To cook, defrost and grill until steak is cooked to desired doneness.
Notes
Chilling the meat slightly before slicing can make it easier to cut.
Lightly oil the grill grates before cooking to prevent sticking.
Soak wooden skewers in water for at least 20 minutes so they don’t scorch over the fire.
Prep extra marinade and freeze it to use as an easy sauce base later.
Experiment with marinade flavors, like adding lemon juice, red wine vinegar, fresh herbs, garlic, or even red pepper flakes for a bit of heat.
Let the skewers rest for a few minutes after grilling so the juices redistribute.
Rotate the skewers often to encourage even caramelization on all the veggies.
