Mini Egg Easter Cracker Toffee

Ingredients

  • 1 cup butter
  • 1 cup brown sugar
  • 40 soda crackers
  • 6 oz white chocolate candy melts
  • 6 oz milk chocolate candy melts
  • ½ cup Mini Eggs chopped

Instructions

  • Preheat the oven to 350 degrees F.
  • Line a rimmed baking sheet with parchment paper.
  • Arrange the soda crackers in a single layer, covering the entire pan.
  • In a medium saucepan, melt the butter over medium heat. Add the brown sugar and stir continuously until the mixture comes to a rolling boil.
  • Let the mixture boil for 2–3 minutes, stirring constantly as it thickens and caramelizes.
  • Carefully pour the hot toffee evenly over the crackers.
  • Place the pan in the oven and bake for 10 minutes.
  • Remove from the oven and immediately sprinkle a mixture of white and chocolate candy melts evenly over the hot toffee.
  • Once melted, spread the chocolate, swirling together as you go, using the back of a spoon.
  • Top with crushed mini eggs while the chocolate is still warm.
  • Allow the pan to cool at room temperature, then transfer to the fridge for about an hour to fully set.
  • Once firm, break into bite-sized pieces and enjoy.
