This Mini Egg Easter Cracker Toffee is crunchy, chocolatey, festive, and completely addictive. One pan never lasts long, especially when my teenagers discover it exists.

Easter around here usually sneaks up on us between spring sports, school projects, and the sudden realization that everyone needs treats for something. This cracker toffee has become one of my favorite Easter desserts because it looks adorable, tastes incredible, and comes together with very little effort.

If youโ€™ve ever made Christmas crack or pretzel toffee before, this is its pastel, candy-coated cousin.

Why You’ll Love This Recipe

This is one of those recipes that feels like you put in way more work than you actually did. Itโ€™s ideal for Easter dessert tables, spring gatherings, or packaging up as sweet little gifts.

Iโ€™ve made this for friends, teachers, and family, and it disappears every single time. Bonus points for the fact that you donโ€™t need a candy thermometer or fancy equipment.

We top the whole thing with crushed mini eggs, which might honestly be the best Easter candy invention ever. My boys will argue that mini eggs are meant for eating straight from the bag, but once they try them smashed into warm toffee, the debate is over.

Ingredients

  • Saltine crackersย โ€“ These buttery, salty crackers create the perfect base for each toffee cookie.

  • Chocolate candy meltsย โ€“ Melt into a smooth, creamy topping for each cookie. A mix of white chocolate and milk is a nice combo.

Tips and Tricks

  • Line the baking sheet with parchment to make removal and cleanup easy.
  • Work quickly once the toffee comes out of the oven so the candy melts spread smoothly.
  • Crush mini eggs inside a zip-top bag using a rolling pin to keep the mess contained.
  • Let the toffee fully set before breaking it to avoid sticky edges.
  • Store in a cool place so the chocolate layers stay firm and glossy.

Frequently Asked Questions

Can I use semi-sweet or milk chocolate instead of candy melts?
Yes, chocolate chips or chopped chocolate will work, but candy melts give the smoothest finish and are easier to spread.

How long does Easter cracker toffee last?
It will keep for up to 5 days at room temperature in an airtight container, or longer if stored in the fridge or freezer.
