Mint Oreo No-Bake Cheesecake

This mint Oreo no-bake cheesecake is cool, creamy and loaded with mint Oreo goodness. It's an easy dessert that’s seriously, so good!

Ingredients

  • 1 ½ cup Oreo cookie crumbs
  • ½ cup butter melted
  • 6 mint Oreo cookies
  • 1 pkgs 250g cream cheese softened
  • ¼ cup sugar
  • 1 tsp peppermint extract
  • 1 tub Cool Whip
  • 6 drops of green food coloring

Instructions

  • Combine the cookie crumbs and butter.
  • Press into the bottom of an 8" springform pan.
  • Beat cream cheese, sugar, and extract until creamy.
  • Fold in half of the Cool Whip until well incorporated.
  • Add food coloring.
  • Spoon the mixture over the cookie crust.
  • Top with remaining Cool Whip and mint Oreo cookies.
  • Refrigerate for at least an hour before serving.

Notes

  • Crushing your cookies in a food processor gives the crust a consistent texture that feels extra polished.
  • Using room temperature full fat cream cheese creates a smoother filling with fewer lumps.
  • Add a splash of vanilla extract with the mint extract for a more complex flavor.
  • Substitute regular Oreo cookies or even gluten-free ones for mint Oreos.
  • Add swirls of chocolate sauce or melted chocolate on top.
  • Pop the cheesecake in the freezer for 20 minutes before you slice it for cleaner edges and a firmer texture.
