1. Spray a 9x13” pan with non stick cooking spray.
2. Place cut up croissants in the dish.
3. In a large mixing bowl, combine eggs, eggnog, vanilla and spices.
4. Pour the egg mixture over the bread.
5. In a small mixing bowl, combine topping ingredients.
6. Spread the topping over all of the croissant mixture.
7. Cover and place in the fridge overnight (or for at least 1 hours).
8. Remove the plastic wrap and bake at 350 for 45-55 minutes until golden brown.
9. Serve with a sprinkle of powdered sugar and/or icing.
