Mix the protein powder into the container of Cool Whip.
Spread the protein, cool whip mixture into square silicone molds and freeze for 24 hours.
In a microwave-safe bowl, melt the chocolate wafers in the microwave at 15 second intervals, stirring in between, until the chocolate is completely smooth.
De-mold the cool whip and dip each bite into the chocolate, letting any excess chocolate dip off, and place on a parchment-lined baking sheet.
Top with festive sprinkles before the chocolate starts to cool.
Place the chocolate bites back into the freezer until you're ready to use them.
