Pumpkin Spice Scone Recipe

Ingredients

  • 2 ½ cups flour
  • ¼ cup sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • ½ cup butter
  • 3 eggs
  • ½ cup sour cream
  • ½ cup pumpkin puree
  • 3 tsp pumpkin pie spice

Instructions

  • Preheat oven to 375 degrees.
  • Mix together sugar and margarine.
  • Add eggs, sour cream and pumpkin.
  • Sift together remaining dry ingredients.
  • Add this mixture to the wet ingredients and combine well.
  • Form dough into two balls.
  • Place each ball onto a greased cookie sheet and flatten into a larger circle about 1" thick.
  • Cut each ball into eight wedges and place on a parchment lined cookie sheet.
  • Bake for 20-25 mins.
  • Drizzle with icing sugar (optional).

Notes

  • Keep the margarine cold and don't overwork the dough. This is the secret to irresistible flaky scones.
  • Add a splash of vanilla extract or a little bit of maple syrup to change the flavor of your glaze. You can even add a few spices to create a pumpkin spice glaze if you’re feeling fancy.
  • Experiment with mix-ins like dark or white chocolate chips, nuts, or dried cranberries to take these scones to the next level.
  • To make smaller scones, simply divide the dough into smaller portions for adorable, bite-sized treats.
  • Store scones at room temperature, in an airtight container. They can also be frozen in a container or freezer bag for up to 3 months.
