Ritz Cracker Toffee Recipe

Ingredients

  • 1 cup butter, unsalted
  • 1 cup dark brown sugar
  • 1 180g box Ritz snowflake crackers original Ritz can be used
  • 1 250g bag semi sweet chocolate chips

Instructions

  • Line a cookie sheet with parchment paper. Preheat the oven to 350 degrees.
  • Lay crackers evenly on the cookie sheet (reserve 6-8 crackers).
  • Combine butter and sugar in a medium saucepan.
  • Heat to boiling over high, stirring consistently. Once the mixture comes to a boil, turn to medium high heat and stir for 2 minutes. Remove from heat and pour over the crackers.
  • Bake for 10 minutes.
  • Immediately sprinkle with chocolate chips and spread the chocolate over the entire cookie sheet as it melts.
  • Top with broken Ritz if desired.
  • Allow to cool for at least two hours before breaking into pieces.

Notes

  • Make sure your crackers are packed tightly on the baking sheet so the toffee spreads evenly without gaps.
  • Watch the butter and sugar closely as it comes to a boil, stir consistently for several minutes to allow the mixture to thicken and incorporate. I like to use a whisk for this.
  • Spread the chocolate while it’s still warm so you get a smooth, glossy layer.
  • Let it cool completely before breaking it into pieces for clean edges and the best crunch.
  • Store leftovers in an airtight container to keep the toffee crisp.
